Lawson's Labor Day Drinks that aren't Laborious

Here we are at the end of the Summer. I can not believe how quickly time passes these days. I thought I would share some of my faves for drinks to wrap up the season.  I always enjoy crisp, cool and of course crafty!

 

Watermelon Sangria-

 

 1 Large watermelon

 

1 750-ml bottle white wine

 

2 c. white rum

 

1 c. Seltzer/ Club Soda/ Pellegrino 

 

1/3 c. lime juice (from about 6 limes)

 

2 limes, thinly sliced

 

2 c. assorted fresh or frozen fruit, such as pineapple, blueberries, and strawberries

 

Slice off the top third of the watermelon lengthwise (save for later use) and score fruit with a knife. Using a large spoon or ice cream scoop, scoop out watermelon and move to blender.

 

Blend watermelon until smooth. (If desired, strain seeds.)

 

Add white wine, rum, seltzer, and lime juice and stir until combined, then add limes and fruit.

 

Refrigerate until chilled, about 2 hours, then serve.

 

 

Frozen Dark and Stormy

 

 1 can ginger beer

 

1 tbsp. fresh ginger

 

Juice of 1 lime

 

2 cups of  ice

 

4 oz. dark rum

 

 

In a blender, blend first 4 ingredients until smooth.

 

Divide among 2 glasses and float 2 oz. dark rum on top of each.
