It’s something that can be done year round and I love that!!! So here’s the quick and easy thought behind it. Make yellow grits. I prefer Anson Mills.Make crispy bacon and then prepare your shrimp by pan searing.
Chop bacon and hard dice shrimp and combine with grits.
Pour out onto a sheet pan and let chill in the refrigerator. Take a cookie cutter and make rounds. By this time you will have made collard greens and chilled them and cut them length wise to make the wrappers for the grits.
Take each round and wrap with collard green wrap. Add a touch of bacon gravy should you wish. Quick and fun appetizer for your dinner party.
